While white cauliflower might be the norm, new colorful counterparts are rising in popularity. These flavorful heads have climbed to popularity with low-calorie, low-carb, and gluten-free health-conscious partakers. Packed with an abundance of vitamins and minerals, the vibrant veggies can bring growers premium prices from high demand.

What Colors of Cauliflower are in Demand?

Among the more unique and popular colors are purple and orange – a strikingly different appearance than the traditional white head. These unique colors also bring new benefits.

Purple cauliflower gets its color from anthocyanin, a naturally occurring phytochemical, known for anti-inflammatory and antioxidant properties. Increasingly popular in farmers’ markets, their orange cousins are full of carotenoids, responsible for delivering higher doses of beta carotene. Beyond their visual appeal, these cauliflower varieties offer a wealth of health benefits, particularly for ocular and cardiovascular health.

Colored Cauliflower Sets Growers Apart from Competition

In 2019, Syngenta launched the varied colors of cauliflowers. Delivering a mild, sweet, and nutty taste in comparison to their white counterparts, the hope was to introduce palates to new experiences. To introduce the new concept, our team conducted many trials and demos. The naturally bred varieties recorded impressive performance in growers’ fields. Unique colors built curiosity amongst growers and consumers.

However, growers wondered if the risk would be worth it. Would they find demand for the product and would there be a premium? Kalpesh Bhai Patel, a farmer from Prantij, a town 60 km from Ahmedabad, Gujarat stepped to the challenge to learn more.  

Taking a chance by cultivating a colorful venture, he was promised premium prices for his produce. Amidst a time when consumers were dictating the market, his visually appealing, nutritionally rich yields faced the market test. Patel’s journey was truly realized upon witnessing how customers willingly accepted these innovative varieties. The impact of the inaugural harvest from his two-acre plot in 2020 was undeniably successful. At the heart of this success story are Syngenta Global Seeds’ varieties of cauliflower.
